Ingredients Required :

  • 2 cups of idli/dosa batter (fermented)

  • Oil or ghee for cooking


Instructions:


Step 1: Prepare the Batter

Start by ensuring you have fermented idli/dosa batter ready. If not, you can prepare it by soaking 2 cups of rice and 1 cup of urad dal (black gram) separately for 4-6 hours. Then grind them together into a smooth paste. Let the batter ferment overnight or for at least 8 hours.


Step 2: Heat the Griddle

Place a non-stick griddle or tava on medium heat. Allow it to heat up evenly.


Step 3: Pour Batter

Take a ladle full of fermented batter and pour it onto the center of the hot griddle.


Step 4: Spread the Batter

Using the back of the ladle, spread the batter evenly in a circular motion to form a thick pancake-like shape.


Step 5: Add Toppings

Sprinkle a handful of finely chopped onions, green chilies (if using), tomatoes, and coriander leaves evenly over the spread batter.


Step 6: Press Gently

Press the toppings gently into the batter using the back of the ladle. This helps them stick to the Uttappam.


Step 7: Drizzle Oil

Drizzle some oil or ghee around the edges and on top of the Uttappam. This gives it a nice golden crust.


Step 8: Cook Until Golden Brown

Allow the Uttappam to cook on medium heat until the bottom turns golden brown and crisp.


Step 9: Flip and Cook

Carefully flip the Uttappam using a spatula and cook the other side until it turns golden brown as well.


Step 10: Serve Hot

Once both sides are cooked to perfection, remove the Uttappam from the griddle and serve hot with coconut chutney, sambar, or your favorite side dish.
